Creamy Carrot Purée Soup

Cozy up with a bowl of velvety Creamy Carrot Puree Soup – a comforting blend of sweet roasted carrots, aromatic spices, and a hint of creaminess.

Ingredients:

  • 5 slices of bacon, cut into pieces

  • 2 tablespoons butter

  • 1 pound carrots, peeled and chopped, about 3 large carrots

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 4 cups chicken broth, I like homemade

  • 1 teaspoon ground cumin

  • 1 teaspoon coriander

  • 1/4 teaspoon red chili flakes

  • Salt and pepper, to taste

  • ½ cup heavy cream (optional), plus more for garnish

  • Fresh herbs for garnish like chives or parsley

  • crispy bacon for garnish

  • toasted croutons for garnish

Instructions:

Sauté Bacon & Vegetables

Heat butter in a large pot over medium high heat. Add bacon and cook until golden. Remove from pot, and let it cool. Add onion and garlic into the bacon drippings, sauté until the onion is translucent, about 5 minutes.

Add Carrots

Add the chopped carrots to the pot and stir everything together. Seson with cumin, coriander, chili flakes, salt and pepper to taste.

Add Broth

Pour in the chicken broth, making sure the carrots are completely covered.

Bring the mixture to a boil, then reduce the heat and let it simmer until the carrots are tender, about 20-25 minutes.

Puree the Soup

Once the carrots are soft, use an immersion blender to puree the soup until smooth. (Alternatively, you can transfer the soup in batches to a blender; just be careful with the hot liquid.)

Add Cream

Stir in heavy cream at this point for a richer flavor. Adjust the seasoning with salt and pepper if needed.

Serve

Ladle the soup into bowls and garnish with a drizzle of heavy whipping cream, fresh chives, bacon pieces and croutons.
