Ingredients:

  • 1½ cups all-purpose flour

  • 2 tsp baking soda

  • 1 tsp cream of tartar

  • 1 tsp sea salt

  • 8 Tbsp (1 stick) unsalted butter, at room temperature, plus extra for greasing

  • 1 cup sugar (divided)

  • 1 large egg

  • ½ cup buttermilk

  • 6 cups sliced peaches

Instructions:

Preheat your oven to 350°F and butter a 9 × 13-inch baking dish. In a bowl, sift together flour, baking soda, cream of tartar, and salt.

Using a mixer & a different bowl, cream together butter and ¾ cup sugar, then beat in an egg. Alternate between adding the flour mixture and buttermilk, making sure to mix well after each addition.

Arrange peaches in the baking dish, sprinkle with remaining sugar, and spoon the batter over the peaches. Bake for 40-50 minutes until golden brown. Let it cool for 10 minutes, then serve warm with ice cream and granola or chopped pecans.
