Pasta Carbonara

Classic Pasta Carbonara made easy with Field Day organic ingredients! Pick up everything you need at the Boise Co-op and whip up this creamy, comforting dish tonight!

Ingredients:

  • 8 oz spaghetti, I like to use angel hair pasta

  • 8 slices bacon, sliced into small pieces

  • 4 eggs room temperature

  • 1 cup parmesan cheese grated, more for garnish

  • 2 cloves garlic finely chopped

  • salt and pepper to taste

Instructions:

1. Begin by sautéing the bacon in a large skillet over medium heat for about 5 minutes, stirring a few times.

2. Add the garlic to the bacon and sauté for an additional 30 seconds before removing the skillet from the heat.

3. In a mixing bowl, combine the eggs, Parmesan cheese, salt, and pepper. Mix the ingredients well and set the bowl aside.

4. Cook the spaghetti in a pot of boiling salted water according to the package instructions, making sure to reserve ½ to 1 cup of the pasta water before draining.

5. Once drained, add the pasta to the skillet with the bacon and egg mixture, tossing everything together. If the mixture seems too dry, add a splash of the reserved pasta water to achieve a creamier texture.

6. Finally, garnish with additional Parmesan cheese and black pepper. Enjoy!
