Molten Lava Cake with Ice Cream

Indulge in decadence with this Molten Lava Cake topped with creamy vanilla ice cream and a drizzle of rich caramel—made with ethically sourced Equal Exchange Chocolate from the Boise Co-op.

Ingredients:

Ingredients for Individual Lava Cakes

  • 2 cups all-purpose flour

  • 2 cups sugar

  • ¾ cup Cocoa Powder Unsweetened

  • 2 teaspoon baking powder

  • 1½ teaspoon baking soda

  • 1 teaspoon sea salt

  • 1 cup buttermilk/kefir

  • ½ cup avocado oil

  • 2 eggs

  • 2 teaspoon Vanilla Extract

  • 1 cup HOT coffee if you don't want to use coffee you can use 1 cup of hot water

• Chocolate Syrup

• vanilla ice cream

Instructions:

How to Make Chocolate Cakes

Preheat the oven to 350°F (175°C). Grease a jumbo-sized muffin pan with butter or baking spray.

In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and sea salt. Whisk until all the dry ingredients are well mixed.

Add buttermilk, oil, eggs, and vanilla extract to the bowl. Mix with a hand mixer until everything is combined.

Gradually add 1 cup of hot coffee and mix on low speed until fully incorporated.

Pour approximately ¾ cup of the chocolate cake batter into each muffin cup. Bake for about 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Once baked, remove the cakes from the oven and let them cool for about 10 minutes. Carefully remove the cakes from the pan using a spatula.

How to Assemble Molten Lava Cake

Flip the cake upside down onto a plate.

With a small spoon, scoop out the center of the cake. (Feel free to eat this part or set it aside.)

Pour chocolate syrup into the center of the cake, add a scoop of vanilla ice cream, and drizzle caramel and additional chocolate syrup over the top. Enjoy your delicious lazy molten lava cake!
