Ingredients:

  • 8 Chicken thighs boneless skinless

  • ¾ cups Soy sauce low-sodium

  • ¾ cups Ketchup

  • 1 cup Brown sugar packed

  • ⅓ cup Chicken broth

  • 2 ½ teaspoons Fresh Ginger grated

  • 1 clove of Garlic finely chopped

  • Parsley for garnish

Instructions:

To make the marinade, mix together soy sauce, ketchup, sugar, chicken broth, ginger, and garlic in a mixing bowl. Save 1 cup of the marinade for later by putting it in an airtight container and popping it in the fridge.

Next, add the chicken thighs to the bowl with the marinade and give it a good mix. Cover the bowl with plastic wrap and let it chill in the fridge for 6 hours or overnight.

When you're ready to cook, grill the chicken for about 3-4 minutes per side until it's cooked through. While grilling, brush the chicken with the reserved marinade using a food brush. Serve the grilled chicken with hot rice and sliced avocados, garnish with parley. Enjoy!
