Easy Beef Chimichanga
Spice up your dinner with this Easy Beef Chimichanga! Made with premium, flavorful Thomas Cattle ground beef, each bite is perfectly seasoned and wrapped in a golden, crispy tortilla. Simple, delicious, and sure to be a family favorite!
Ingredients:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, finely chopped
2 teaspoons Taco Seasoning
salt & pepper to taste
16 oz. refried beans
4 oz. green chile peppers, diced
6-8 tortillas
1 cup spinach, chopped
2 cups Sharp Cheddar Cheese, grated
avocado oil spray
Garnish
2 medium tomatoes, peeled & cubed
salsa for serving
sour cream for serving
green onion chopped, for garnish
Instructions:
Preheat the oven to 400°F and line a baking sheet with parchment paper.
In a skillet, cook the ground beef and chopped onion over medium-high heat. Stir occasionally, breaking the beef into small pieces with a wooden spoon, and cook until the beef is browned. Drain any excess grease.
Add the finely chopped garlic, taco seasoning, and salt and pepper to taste. Stir well to combine. Then, mix in the green chilies and refried beans. Stir until everything is evenly combined and heated thru. Remove from heat.
Place a warm tortilla on a plate and spoon some of the beef mixture into the center. Top with shredded Sharp Cheddar cheese and chopped spinach.
Fold in the sides of the tortilla, then fold the top and bottom to encase the filling, forming a chimichanga.
Place them on the prepared baking sheet, and spray avocado oil over the top. Bake for 15-20 minutes, or until golden brown and crispy on top.
Serve Chimichangas with salsa, cubed tomatoes, extra cheese, sour cream, and finely chopped green onion. Enjoy!
