Cheesy Lemony Roasted Broccolini with Garlic

Broccoli and Gai Lan (Chinese Broccoli) walk into a bar… that’s how broccolini was made. In actuality, broccolini is a hybrid of broccoli and Gai Lan. Broccolini has a thinner stalk and is much more delicate than broccoli with a slightly sweeter taste. The vegetable is very versatile in both Eastern and Western dishes, but roasting it will bring out more of the natural flavors. Adding garlic, parmesan cheese, and lemon will make this side dish a hit at any dinner. If you’ve never tried broccolini before, it’s packed full of nutrition and flavor. Ingredients
2 lbs of broccolini (trim off the woody part of the end)
3 tablespoons of extra virgin olive oil
1/2 a teaspoon of sea salt
1 teaspoon of black pepper
6 whole cloves of garlic
8 slices of lemons
Finely shredded Parmesan cheese
Lemon wedges for serving
Directions
Preheat over to 425°F.
Wash the broccolini thoroughly and towel dry and place it in a large bowl. Be sure the broccolini is very dry (any added moisture will prevent it from roasting properly).
In the bowl, add olive oil, sea salt, pepper, and garlic cloves. Gently toss until everything is evenly coated in the oil.
Spread everything in a single layer on a large rimmed baking sheet.
Scatter lemon slices alongside the broccolini and garlic.
Sprinkle Parmesan cheese on top of everything.
Roast in the oven for 12-20 minutes until everything is lightly charred and crisped on the edges, tossing once during cooking.
Plate and serve immediately with a side of lemon.
