With Cinco De Mayo around the corner, come prep, cook, and eat an array of dishes that are easy to make for a fun and festive Cinco De Mayo party! Our focus will be on how to use a Roasted Pork Roast to make a variety of dishes to keep it easy. We will be using a variety of premade items from the Boise Co-op while still doing some fresh prep to keep it healthy and delicious!
Our first dish will be a Tostadito with Jumbo Shrimp. You will assemble this morsel with fresh toppings. From a seasoned roasted tender pork, you will be building and sampling street tacos, tostadas, a special Mexican salad, and corn salsa and enjoying Green Chili Enchilada bake with rice and beans.
If you are over 21, you can pair this with a Mexican beer, choices will vary.

About Class Instructor:
Ruth is a self-taught chef and has been cooking for over thirty years. She finds cooking international cuisine an adventure and loves to cook comfort foods as well. Celebrating many holidays, she brings tasty colorful foods with friends and family together. Her dinner parties are interactive, and everyone gets to help and enjoy bringing the festivities to life. Ruth is a continuously learning chef and enjoys cooking the following cuisines: Mexican, Italian, Thai, Chinese, German, French, Indian, Americana Steakhouse, Baking, Breads & flatbreads, tortillas, Turkish flatbread, Naan, Pizza dough, cakes, crepes, cookies, pies. Ruth has been working for the Boise Co-op for over two years and is currently the Boise Co-op Meridian Deli Manager. In addition, Ruth has been writing as the Food Editor for the magazine: Star Spirit 86339 for over two years. She is working on a Family Traditions cookbook to be released in the Fall of 2024.
