Huckleberry Lemonade

Refreshingly tart and sweet, this homemade huckleberry lemonade is the perfect summertime treat!

Ingredients:

  • 8 oz huckleberries wild, frozen or fresh, about 2 cups

  • 1 ¼ cup sugar more it you like it sweeter

  • 7 cup water 2 cups of boiling hot water + 5 cups cold water

  • 1 ½ cup lemon juice freshly squeezed

Instructions:

In a blender, combine huckleberries and 2 cups of water, then blend until smooth. Strain the puree into a large bowl using a fine mesh sieve to remove the seeds. In a small bowl, mix sugar with 2 cups of hot water until completely dissolved. Strain the freshly squeezed lemon juice into the huckleberry mixture, add the sugar syrup, and stir well. Pour in 3 cups of cold water and stir. Taste the lemonade and adjust the sweetness by adding more water or sugar if necessary. Serve over ice and garnish with huckleberries, lemon slices, or mint leaves for a delightful and refreshing drink. Enjoy!
