Guinness Beef Stew

If you’re looking for a cozy Irish-inspired stew to celebrate St. Patrick's Day, this Guinness Beef Stew never fails to impress!

Ingredients:

  • 8 slices bacon, cut into small pieces

  • 2 ½ pounds boneless beef chuck, cut into 2-inch pieces

  • 1 tablespoon steak spice, or to taste

  • freshly ground black pepper & sea salt, to taste

  • 2 onions, chopped

  • 3 cloves garlic, finely chopped

  • ¼ cup tomato paste

  • 3 carrots, cubed

  • 2 stalks celery, cubed

  • 3 tablespoons flour

  • 1 (14.9 ounce) can dark beer, Guinness

  • 3 cups chicken broth

  • 3 sprigs fresh thyme

  • 2 bay leaves

Instructions:

Begin by cooking bacon until crispy, inside the dutch oven, transfer bacon onto a plate, remove bacon grease keeping about 2 tablespoons of bacon fat in the pot.

Season beef cubes with steak seasoning, salt, and pepper, and cook them in the bacon fat until browned. Transfer onto a plate with bacon.

Add onions and garlic to the pot and cook until lightly browned on both sides about 5 minutes.  Add tomato paste, carrots, and celery, stir, and cook for 5-8 minutes, stirring a few times. 

Sprinkle flour and stir for one minute.

Stir in beer and chicken broth, and add thyme and bay leaves.

Let the stew simmer until the beef is tender, about 2 hours, covered.

Stir occasionally and remove any fat or foam that collects on the surface.

Once the stew is ready, remove the thyme. Adjust the seasoning to taste if needed and serve the stew over mashed potatoes. Enjoy!
