Cranberry Salsa with Burrata Cheese

When the word "cranberries" is mentioned during a Thanksgiving meal, people tend to think about that slimy-gelatinous stuff that comes out of a can. Cranberries have had a bad wrap over the holidays. If you've ever popped a fresh cranberry into your mouth, you probably won't consider doing it again. It's tart, bitter, and very pungent. Not very pleasant to the palate. But if you mix just a few simple ingredients together, your guest will go crazy over this fresh cranberry salsa. This sweet, sour, and mildly spicy side dish will become a holiday staple. This salsa pairs perfectly with a ball of fresh burrata cheese. The acidity from the cranberries will cut into the fatty creaminess of the cheese, and the cheese will tone down the tanginess of the salsa. Serve it with a side of buttery crackers or tortilla chips. Better yet, scoop some on top of your turkey or holiday ham. Stop serving that wobbly traditional cranberry sauce everyone tosses out at the end of every Thanksgiving feast! This year let fresh cranberries be the celebrity of your family gathering.

Ingredients

  • 12 ounces fresh cranberries

  • Zest of half an orange

  • Juice from half an orange

  • 1 tablespoon of lime juice

  • 3 green onions, white and light green part only

  • 1 jalapeno, seeded and chopped

  • 1 serrano chile seeded and chopped (omit if you have a sensitivity to spice)

  • 1/2 cup of cilantro (stems included)

  • 2 tablespoons of sugar

  • Salt to taste

  • 8-ounce ball of burrata cheese, drained

  • Finishing salt

  • Crackers and tortilla chips for serving

Directions

  1. Combine fresh cranberries, orange zest, orange juice, lime juice, green onions, jalapeno, serrano, cilantro stems, sugar, and a big pinch of salt in a food processor.

  2. Pulse for about 30 seconds until everything is finely chopped. Take the lid off and scrape down the sides with a rubber spatula. Plus again for 30 more seconds.

  3. Taste to see if you need another pinch of salt.

  4. Pour the salsa into a large shallow bowl and place the burrata cheese on top.

  5. Sprinkle a pinch of finishing salt on the cheese.

  6. Serve with crackers and tortilla chips.
