Traditional Italian Panzanella
A classic summer salad that’s great for bbq’s and dinner parties, and extremely easy to make!
Ingredients:
1-pint cherry tomatoes, cut in half
½ a baguette or sourdough loaf, cut or torn into cubes
Olive oil
Balsamic vinegar
2 garlic cloves, minced or grated
Salt and pepper
Bocconcini mozzarella, diced
A handful of fresh basil, cut into chiffonade*
Add diced cucumbers or bell peppers if you have them on hand.
Directions:
Toss the tomatoes with olive oil, vinegar, garlic, salt, and pepper. Stir in the basil and mozzarella. Add the chunks of bread and toss in. Let set for a few minutes so that the bread can sop up the juices. Perfect with some rose on a warm spring afternoon!
*fancy-speak for thin ribbons—just roll the leaves then thinly slice!
