Traditional Italian Panzanella

A classic summer salad that’s great for bbq’s and dinner parties, and extremely easy to make!

Ingredients:

  • 1-pint cherry tomatoes, cut in half

  • ½ a baguette or sourdough loaf, cut or torn into cubes

  • Olive oil

  • Balsamic vinegar

  • 2 garlic cloves, minced or grated

  • Salt and pepper

  • Bocconcini mozzarella, diced

  • A handful of fresh basil, cut into chiffonade*

  • Add diced cucumbers or bell peppers if you have them on hand.

 Directions:

Toss the tomatoes with olive oil, vinegar, garlic, salt, and pepper. Stir in the basil and mozzarella. Add the chunks of bread and toss in. Let set for a few minutes so that the bread can sop up the juices. Perfect with some rose on a warm spring afternoon!
