Buffalo Chicken Celery Boats

Are you excited about the big game this weekend? Honestly, some folks are more excited about the food. Buffalo chicken is one of the top favorite foods to eat during the big game, and of course, you have to have some celery to cool down the spiciness and sneak in a vegetable. The natural shape of celery sticks also makes the perfect little handheld-vessel—they’re just asking to be filled up with something tasty. Celery loaded with a spicy Buffalo chicken salad makes the perfect party snack or game day appetizer! So if you have to sit through four hours of something you don’t love, at least have good food to snack on!
Ingredients
6 ounces of cream cheese
1/4 cup sour cream, softened at room temp for at least 30 minutes
1 Tbsp buttermilk
3 Tbsp of Frank’s Red Hot Sauce (more if you like it spicier)
1/4 tsp onion powder
1/2 tsp garlic powder
1/4 c shredded cheddar cheese
1 1/2 cups of rotisserie chicken breast shredded
1/4 c crumbled blue cheese
Salt and pepper to taste
5 stalks of celery, washed, dried, and cut to approximately 3-inch sticks
chopped Pasley or scallions for garnish
Ranch dressing for dipping
Directions
In a large bowl, mix softened cream cheese, sour cream, buttermilk. Add hot sauce to help loosen up the cream cheese making sure everything is well mixed.
Add the onion powder, garlic powder, cheddar cheese, and shredded chicken to the bowl.
After everything is well incorporated, fold in the blue cheese.
Check the flavor before seasoning with salt and pepper (rotisserie chicken and blue cheese can be pretty salty).
Spoon mixture into the celery boats.
Garnish with some chopped parsley or scallions, and serve with a side of your favorite ranch dressing.
