Breakfast Burrito

Because mornings are hard, but wrapping everything in a tortilla makes them slightly less so.

Ingredients:

  • For Scrambled Eggs

    • 2 tablespoons butter

    • 6 large eggs

    • ½ teaspoon garlic powder

    • ⅛ teaspoon cayenne pepper

    • sea salt & pepper to taste

  • For Burrito

    • 4 large tortillas warmed

    • 2 cups pan-fried potatoes or roasted potatoes store-bought or homemade

    • 1 cup cheddar cheese grated

    • 1 cup breakfast sausage cooked and cut into pieces

    • 5 slices bacon sliced and cooked

Instructions:

How To Make Scrambled Eggs:

Melt butter in the skillet over medium heat, add eggs and spices, stir, and cook until eggs are cooked through.

How To Make Burrito:

Lay out a tortilla, and in the middle, load it up with ½ cup of fluffy scrambled eggs, ½ cup of golden potatoes, and a delightful sprinkle of ¼ cup of cheese.

Add ¼ cup of crispy bacon and savory sausage. Next, roll it up into a delicious burrito and cook in the skillet with a bit of butter or oil until golden brown on both sides.

Or bake in the oven at 350F for 10 minutes. Serve with salsa and sour cream.
