Meal in Minutes: Honey-Dijon Glazed Steelhead Trout


  • 1/4 cup organic butter
  • 2 cloves garlic, minced
  • 2 tbsp local honey
  • 2 tbsp organic brown sugar
  • 2 tbsp rice vinegar
  • 2 tbsp Dijon mustard
  • 2 tbsp soy sauce
  • 2 lbs Steelhead trout*


  • Preheat oven to 400°F.
  • Melt butter in a sauce pan with heat on low. Whisk in all ingredients except the fish.
  • Put the fish in the center of a rectangle of foil. Remove saucepan from stove and pour over fish, folding the foil around the fish to keep the glaze in.
  • Place in oven and bake for 10 minutes, plus an additional 10 minutes for each inch of thickness (a 1.5" fillet would be 25 minutes)
