Cooking Class: Indian Inspired Brunch with Sangeeta

Indian cuisine uses the whole palette of flavors—spicy, sour, sweet, and hot all at the same time—making it something that wants to jump off the plate! With its array of spices and condiments and experimental attitude, Indian cuisine allows home cooks to get creative and adventurous. 

Brunch in India is typically enjoyed on Sundays and consists of a variety of light snacks served along with Chai Tea.  For this class, Sangeeta will demonstrate how to make some of her favorite brunch recipes from different parts of India. As always, she will be adding her own tips, twists and creative approach!

While pairing wine and cheese can be an overly-complicated business, and pairing beer and cheese can fill you up too quickly, cider and cheese are natural companions. Many drier styles pair beautifully with rich, buttery cheeses (think double-cream cheddar, a 2-year aged gouda or a creamy bleu), while the big apple flavors of semi-sweet ciders is gorgeous with fresh chevre or mild, nutty, soft-ripened cheeses.

Cooking Class: Trip to West Bengal with Sangeeta Mistry

This class will cover dishes inspired by West Bengal as well as other Indian states in the east.
Bengali cuisine is known for its subtle and fiery flavors, with unique cooking styles. With an emphasis on vegetables, lentils, rice and spices, this is a little-known part of Indian cuisine.

The use of spices for vegetable dishes is quite extensive and includes many combinations not found in other parts of India. Main examples are the onion-flavoured kalonji (nigella or black onion seeds), which is one of the spices in Panch Phoron Masala, (blend of 5 whole spices) the use of which can elevate a humble dish to a whole new level.

Come join Sangeeta as she demonstrates this unique cooking style and discover another distinctive food culture of India!

Kid-friendly Soups for Chilly Winter Days

Who doesn’t like soup on a chilly winter day... your kid? Many choosy kids don’t like soups because they contain so many different ingredients that they can’t easily pick out the stuff they don’t like. In this class, we will prepare two different simple, nourishing soup recipes that they are sure to love. Recipes will be gluten free and dairy-free. Kids are encouraged to create and sample with us. Adults are free with paid kid’s registration. Each child will require a purchased ticket.

Wine Class: Sparkling Wines of the Roederer Family with Scott Sprague

BUILDING UPON A 200-YEAR TRADITION OF WINEMAKING EXCELLENCE

Roederer Estate Brut is the first California sparkling wine to be produced by Champagne Louis Roederer, further building upon a 200-year tradition of fine winemaking from this family owned company. Roederer's unique winemaking style is based on two elements: complete ownership of its vineyards and the addition of oak-aged reserve wines to each year's blend or cuvée. Jean-Claude Rouzaud, then president of Champagne Louis Roederer and fifth generation descendant of the founder, selected the 580-acre Anderson Valley vineyard and winery site in 1982. Rouzaud, who has since handed down the family tradition and position to son Frédéric Rouzaud, believed that estate-owned vineyards were essential to ensure top quality wine, and had searched California for ideal growing conditions throughout the course of several years.

Class: Candy Canes with Costello!

You've most likely never thought about making candy canes at home, but in this class with Jon Costello, you will learn how!  Jon will show you how to pull sugar using the “wet cooking method”. Sugar can be used for more than sweetening cakes and muffins. When placed in a pan and melted by itself, using the “dry method”, you can make a delicious caramel by adding cream and butter. When cooking using the “wet method” you boil sugar to a much higher temperature and have it remain crystal clear. By using this method, you are able to blow the sugar into a variety of shapes, pull and tie beautiful sugar bows, flowers, taffy, or even sugar sculptures. 

Jon will send you home with recipes, tips and tricks to use when you start working with sugar. After this class he promises that you will be able to awe your friends and family with this very impressive technique!

In Jon's words:

"My name is Jonathan Costello and I grew up in a small town in upstate NY. It was in this small town that I learned from my Nanny how to make ravioli, bake cakes, and even how to pick mushrooms. This love of cooking took me on to The Culinary Institute of America where I graduated as a pastry chef in 2012. Currently I work at the Boise Co-Op as a baker while I finish my Undergraduate Degree in Pre-Med and Chemistry."

Wine Class: Celebrate With Champagne!

When it comes to celebrations, nothing makes the occasion as special as the real deal—Champagne—perhaps the world’s most famous wine.

Join Divit Cardoza as he shares his deep knowledge of this historic region. Champagne, the wine, is named after the region where it is grown, fermented and bottled: Champagne, France. Nestled in the country’s northeastern corner, near Paris, the only labels that are legally allowed to bare the name “Champagne” are bottled within 100 miles of this region (according to European Law). In addition to location, Champagne also receives its distinguished name because of the grapes used to produce it. Grown in a mild climate with chalky and mineral rich soil, the flavor of these grapes is truly unique. 

This tasting will include appetizers and desserts from the Co-op Kitchen.
