Honey Ricotta Fig Toast

If you love figs, this recipe is undoubtedly one of the easiest ways to enjoy the natural flavors of this delicious fruit. Simply smear your toast with a no-fuss whipped lemon honey ricotta spread, top on some fresh figs, and sprinkle on some toasted walnuts. Voila! You’re done! But, if you want to elevate this recipe into something a little more elegant, make every bite gooey by drizzling on a little more honey, round off the sweetness with a dash of sea salt, and finishing everything off with some fresh lemon zest. This is a perfect energy-boosting treat you can enjoy any time of the day. Serve this to your friends, and they’ll completely forget about avocado toast.

Ingredients

Fig Spread

  • 1/2 cup ricotta cheese

  • 1 tablespoon of heavy cream

  • Zest of 1/2 a lemon

  • 1 teaspoon of fresh lemon juice

  • 1/2 tablespoon of honey

  • Dash of sea salt

Fig Toast

  • 2 slices of whole grain bread

  • 1 teaspoon of walnut oil

  • 4 brown turkey figs

  • 1 tablespoon of chopped lightly toasted walnuts

Optional Garnish

  • Light drizzle of honey

  • Pinch of sea salt

  • Lemon zest

Preparation

  1. In a small bowl, combine ricotta, heavy cream, lemon zest, lemon juice, and sea salt.

  2. Whisk together for about 5 minutes, until light and fluffy. Set aside.

  3. Brush toast on both sides with walnut oil and toast on a grill or cast iron pan on both sides until toasted to your preference.

  4. Spread ricotta mixture onto your toast.

  5. Cut figs in half and lay 4 fig halves on each slice of toast.

  6. Sprinkle on the walnuts.

  7. Garnish each toast with a light drizzle of honey, pinch of sea salt, and a little lemon zest.

Cranberry Relish

Cranberry relish is a holiday staple for many. Tangy and sweet, this is the perfect "make ahead dish," as its flavor improves when allowed to sit (in the refrigerator) overnight.

Ingredients

  • 1 pound whole cranberries, fresh or frozen

  • 1 pound Granny Smith apples, cored and finely chopped

  • 15 ounces canned mandarin oranges, drained and finely chopped

  • 10 ounces canned crushed pineapple, drained

  • 1/2 cup honey

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon ground ginger

  • 1/4 teaspoon allspice

Preparation

  1. Pulse cranberries in a food processor until coarsely chopped.

  2. Transfer into a bowl and add pineapple, apple, and orange pieces.

  3. Add honey and spices and mix well. Taste and adjust as needed.

  4. Refrigerate overnight to allow flavors to develop. Bring to room temperature and mix well before serving.

Bourbon & Honey Glazed Carrots with Thyme

Total Time: 50 minutes

Bourbon and honey glazed carrots with thyme is the prefect side dish for any dinner.

Ingredients

  • 2 pounds rainbow carrots, unpeeled, cut halved lengthwise leaving a small amount of the greens attached at the end.

  • 1½ tablespoons of olive oil

  • 1½ teaspoons flaked sea-salt

  • ½ teaspoon freshly ground black pepper

  • ¼ cup of butter

  • 2 tablespoons of bourbon

  • 2 tablespoons of honey

  • dash of cayenne pepper (more or less depending on your spice level)

  • 2 springs of thyme

Preparation

  1. Preheat oven to 450°.

  2. Toss carrots, oil, salt, and pepper on a rimmed baking sheet lined with parchment paper.

  3. Roast, tossing occasionally, until tender 25-30 minutes.

  4. Meanwhile on low heat, in a small sauce pan add butter, bourbon, cayenne pepper, honey, and 2 springs of thyme until everything melts together.

  5. After the carrots are tender, glaze the carrots with the butter bourbon herb mixture and return them to the oven for 5-10 more minutes tossing occasionally until the carrots are nice and brown (keep a close eye on carrots at this stage, the high sugar content in the honey and bourbon will cause the carrots to burn quicker).

  6. Optional, garnish with fresh thyme leaves.

  7. Serve immediately

Chevre, Fig and Honey Pizzas

This pizza is a lovely mix of sweet and savory, and showcases the Mediterranean flavors of figs and tangy cheese. If you are looking for some nibbles to serve alongside wine, make a few of these. They will be a hit!

Ingredients

  • 4 small naan breads or pitas

  • 8 large fresh or dried, moist figs

  • 1 teaspoon red wine (if using dried figs)

  • 2 tablespoons honey

  • 1/2 teaspoon cracked black pepper

  • 6 ounces crumbled chevre

  • 1 tablespoon fresh thyme sprigs

Preparation

  1. Preheat the oven to 400°F. Place the naan or pita breads on a sheet pan and reserve. Slice the figs across the fruit, making rounds. If you are using dried figs, and they seem dry, put them in a small bowl and sprinkle with the wine. Let soak for ten minutes.

  2. Drain any remaining wine and distribute the fig slices on top of the naan. Drizzle with honey and sprinkle with pepper, then top with crumbled chevre and thyme.

  3. Bake for 12-15 minutes, until the bread is crisp on the bottom and the cheese is melted. Serve hot.
